Diet simulation by food substitution
Study how the integration of legumes into the diet as substitutes for meat or starchy foods can impact the overall sustainability of food choices.

We have simulated different diets by substituting food categories.
These simulations were carried out by modifying food categories intakes in various diets and measuring the impact of these substitutions on nutritional and environmental indicators.
Our study demonstrated that replacing meat with legumes may not be as beneficial for sustainability as expected. This dietary change could also face obstacles related to consumers’ cultural preferences. This highlights the importance of considering both environmental and cultural aspects when evaluating such food substitutions.
Our research has contributed to enriching the scientific literature on the category of legumes.
